I don't quite understand what "tuning my mids and highs/subs" mean.

Is it about setting the right crossovers on the speakers and playing with the EQ?

I hear people say it took them a month to tune their system just right, which makes me a bit confused.

Tuning a system consists of setting crossovers, levels, and the eq. It can be very difficult to do this by ear, and if done by your ear, it's going to be taylored to your tastes. Additionally you will probably have different settings you prefer for different music the more options your HU gives you the more the possibilites...

Yup, that ^^^

Getting the balance of main speakers HPF v.s. subs LPF, EQ settings, tweeter crossover and gain/power levels to give overall tonal balance over a wide range of music is a time consuming chore.
